- 1 kg basmati rice (Salam India a brand of India gate only has good long grains)
- as required Water (quality of rice may vary so add water according to the pack instructions)
- 1-1/2 teaspoon salt

- 6-8 green cardamoms
- 1 star anise
- 2 black cardamoms
- 6-8 cloves
- 1/2 teaspoon shahizeera
- as per need Chicken dum biryani yakhni marination
- For garnishing on last layer:-
- 1/2 cup milk
- 2 pinch strands of saffron
- 2 tablespoons ghee
- 2 pinch lemon yellow food colour or dash of orange red food colour like Pakistani biryani
- 2-3 pinch Garam masala powder to sprinkle
Steps to make to make Chicken Dum biryani
- Firstly cook rice until it’s 60%_70% cooked then drain water immediately. Further in a wok apply oil and pop the chicken Yakhni now add rice,add all garnishing ingredients ghee,fried onions,saffron milk,food colour & Garam masala to sprinkle. Dig holes using backside of spoon.drizzle some fried onions oil.finally cover the lid and make sure the steam is not leaked out.
- Let it cook for straight 20-25 minutes of medium flame burner meanwhile simply rotate the wok using kitchen gloves or kitchen towel.once it’s nice & aromatic all around the kitchen off the flame burner let it rest in its steam for more 5-10 minutes.finally mix it and serve it hot with raita,mirchiyon ka Salan,salad etc..!
